Here is your official warning: you’re gonna love these.
Nothing says #5DaysofFall like some banana bread muffins and overnight oats that taste like a dream. Overnight oats are the EASIEST breakfast or snack treat, and banana bread muffins are shockingly simple and go great with coffee at any time of day, or make a good dessert when you’re in a pinch.
Best news? There’s a good chance that you already have all of these ingredients. AND they are both vegan!

Autumn Spice Overnight Oats
ingredients (per serving)
1/2 cup oats
1/2 cup almond milk
1/4 sliced banana
1/2 tsp vanilla extract
1/2 tsp cinnamon
maple syrup for serving
Instructions
In a cup, pour in the dry oatmeal, layering half of your banana slices in between and on top. Then pour in the vanilla, followed by the almond milk, then sprinkle cinnamon on top. If you’re using quick oats, refrigerate at least 20 minutes before serving. If you’re using old fashioned oats, give it an hour (or overnight!). Drizzle a little maple syrup on top and enjoy!
Banana Bread Muffins
Ingredients
1 cup flour (your choice)
3/4 cup sugar
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup oats
2 tsp baking powder
1/3 cup oil (your choice, I usually use vegetable)
1 tbsp vanilla extract
1 egg OR 2 tbsp applesauce
1 1/2 banana, sliced
1/2 cup almond milk
Instructions
Preheat the oven to 400 degrees. Mix all the dry ingredients together before adding in the oil, vanilla, egg/applesauce, milk, and banana. Stir everything in gently until it mixes – don’t overmix it. Use oil to grease a muffin pan or mini loaf pan, and then fill 3/4 of the way with the mixture. Bake at 400 degrees for 20 minutes or until a toothpick inserted in the middle comes out clean.
