easy + delicious potsticker soup

Yields4 Servings

 10 cups your choice broth (chicken, beef, veggie)
 2 garlic cloves, minced
 1 bundle of green onions, chopped
 1 small freshly minced ginger root
 2 cups brussel sprouts, fresh or frozen
 2 carrots, thinly sliced
 2 celery stems, diced
 1 bundle of fresh bok choy (or spinach), chopped
 1 package Trader Joe's frozen potstickers
 1 tsp sesame oil
 2 tbsp soy sauce
 3 tbsp rice vinegar

In a large pot, heat the broth over medium high heat. Add in chopped veggies, leaving out the bok choy. Let it simmer for 10 minutes OR until the veggies are all tender. Stir in the rice vinegar, soy sauce, and sesame oil. Add in the bok choy and potstickers, and let it all heat together for another 5-7 minutes.

Serve right away with a dash of sriracha sauce!
