Back in February, Peter and I were in London. We went out one morning to this cute little breakfast nook. They served coffees, teas, little omelettes, scones, and smoothies. Obviously, I went with the smoothie… I had already been through a couple disappointing encounters with London food (I ordered a pizza one time and it came dry with shards of cucumber on top. #whatthewhirl). I was under the impression that it’s not really possible to mess up a smoothie…
Doesn’t everyone make their smoothies with some kind of frozen substance? Evidently the people of London like their smoothies room temperature and yogurty. BLEH. Not today, satan. I’m gonna get you alllllll the good tips on how to make some smoothie magic.
Breakfast plans? Smoothie. Lunch plans? Smoothie. Dinner plans? Smoothie. Dessert plans? Smoothie. Summer survival? Smoothie.
LET’S. DO. THIS.
First tip – I always skip the ice, and instead keep a stash of frozen fruit. It’ll make your smoothies thicker and richer in flavor. This is super helpful for when there’s a great deal on in-season fruits – you can stock up on them and freeze them for weeks to come.
I’m gonna give you a simple list of ingredients I keep on hand for a smoothie you can’t mess up – and then a fun recipe for a stacked smoothie – perfect for company… or just instagram… your preference.

keep these goodies on hand and mix them up to your heart’s content. Sometimes I do just strawberry and banana for an angel food-type flavor, or strawberries and blueberries without the bananas for a tarter variation. My main focus when I’m smoothie-ing is keeping the consistency thick, so I often add as little milk as possible at the start and then gradually add more until it’s thick enough to not be considered sorbet. Lol
Frozen bananas
Frozen strawberries
Frozen blueberries
Almond milk
Vanilla extract
Sweetener of your choice
Honey (topping)
Shredded coconut (topping)
Now for the fun, here’s a stacked smoothie I made last summer. I’ve done many variations on these, but here’s one that’s super colorful and a lot of fun!
Blueberry Matcha Stacked Smoothie
Layer 1: greeeeen.
1 small avocado
2 tbsp matcha powder
1 1/2 frozen bananas
1/2 cup almond milk
Yes I said avocado. Don’t panic.
Layer 2: purple
1/2 frozen banana
1/2 cup frozen blueberries
1 tsp of your choice sweetener
1/4 cup almond milk
1/2 tsp sweetener of your choice
Layer 3: pink
1/2 cup strawberries
1/3 cup almond milk
1/2 cup Greek yogurt
1/2 tsp sweetener of your choice
Garnish
1 Kiwi (sliced mega thin)
Honey
Shredded coconut
After blending each layer, pour them into a bowl and set them in the freezer while you finish up the rest. It’s important that these stay as thick as possible! Once you’re done blending all 3 times, it’s time to start stacking. Using a spoon, add the first layer to a clear cup, avoiding any smudges on the sides. Next, If you wanna be fancy, add in the kiwi. You’ll slide it down the sides of the cup, avoiding an air gap. If you’re having trouble with it not sticking to the sides, try to slice it thinner! Then add layers 2 and 3, and top off with honey and shredded coconut to give it that extra magic.
